Hello Possums!
Here's my quick pizza:
The base is flat bread, or pocket bread, or souvlaki bread.
Spread with pizza sauce from a packet, I get the one-tablespoon packs.
There are no rules or limits to toppings.
Veggies like capsicum, tomato, avocado, & red onions don't need cooking. Kumara (sweet potato), potato, broccoli, aubergine (eggplant) et cetera only need steaming or grilling.
Seasoning. Torn up fresh basil and oregano leaves. Sweet or hot chilli sauce, or any sauce.
Salami, prosciutto, sardines, anchovies, tuna.
Grated mozzarella, parmesan, cherry bocconcini, and so on.
Nuke in the microwave until the cheese melts.

Baked beans on toast (never heard the term skinheads on toast tiger, will no doubt think of that next time I open a tin and my kids will wonder why I'm giggling at a tin of beans) or eggs on toast. I really don't like tinned food but for the kids' sake I keep those chunky soup tins in the cupboard so they have something if I'm feeling slack - they seem to love them.

Here's a ridiculously easy recipe, 5 min prep time, 20 min cook time and it is DELICIOUS. Tastes SO much better than the efort involved implies.
Ingredientsper person:
1 Chicken breast (I prefer skinless)
Sliced ham
Sliced or shredded cheese (I like swiss or mozzarella)
Couple of nice tomatoes - Romas hold up well to cooking.
Olive oil spray
salt/pepper
Preheat oven to around 180C
Butterfly the chicken breast - there is actually a naturally occurring 'flap' shape and I often just use this rather than cut it further
Line the opened chicken breast with a slice of ham and cheese
Fold back up and secure with a couple of toothpicks
Put on an oven proof dish/tray
Halve the tomatoes and arrange open face up around chicken
Spray lightly with olive oil and add salt/pepper to taste (a wee sprinkle of dried oregano, or something like vegeta can be nice too)
Bung in the oven for 20 minutes
While that is cooking start your rice (even easier if you have a rice cooker), it should be ready at about the same time as the chicken.
Serve the chicken and tomatoes on top of the rice.
Bask in the compliments/yummyness.
